LI SARDONCÌ A SCOTTADETO, (anchovies cooked over charcoal) written as it is typically pronounced in the dialect of the Marche, is one of the most typical and tasty recipes of the Riviera.
Originally created as a poor man’s recipe, it is today one of the most traditional dishes to be enjoyed in summer, whether for dinner or with an aperitif on the seafront. TRADITIONALLY, THEY MUST BE EATEN WITH YOUR HANDS WHILE STILL VERY HOT, hence the name “scottadito” (finger-burning).
