Ancona’s stockfish “Stoccafisso all’anconitana”

A dish we can include in the culinary tradition of Ancona is the stockfish, also known as “stoccafisso all’anconitana”. A  dish so rooted in the customs of the city not just being the protagonist on the tables during the feast days, but having an entire academy dedicated to it too, The Academy of stockfish. There is also a celebration named “Stoccafissando”!

A fish catched in the sea of the far-northern that perfectly combines with the traditional ingredients of the Mediterranean cuisine and becomes an unforgettable and juicy dish to try.

A minced mix of herbs, vegetables, potatoes and olives is the “bed” where the stoccafisso all’anconitana lies and develops more flavour… but don’t waste more time reading, go for it and taste it!

Many are the restaurants that offer this dish and where you can taste it, cooked according to the original recipe… try it accompanied with a good glass of white wine, the local one obviously!
